Using Universal Media Server the right way...

Universal Media Server works great for me but I needed help with a few things:
1) I've got subtitles (.SRT) for all my movies, all of which have the same filenames as the movie filenames. For some reason these never appear when I play movies on my PS3. All movies and subtitles are in English. What are the correct settings to make these work?
2) I've read that it's possible to play .MKV and .FLV movies on the PS3 via Universal Media Server/PS3 Media Server. I cannot get them to work at all. What are the right transcoding/remuxing settings I need to use.
3) What's the correct setting to order the files in this fashion:
The Walking Dead 001-002.jpg
The Walking Dead 003.jpg
The Walking Dead 004.jpg

The Walking Dead 010.jpg
The Walking Dead 011.jpg
Currently the order is in this fashion:
The Walking Dead 010.jpg
The Walking Dead 011.jpg

The Walking Dead 001-002.jpg
The Walking Dead 003.jpg
The Walking Dead 004.jpg
Can anyone help with these?
Thanks in advance.
