Could be many reasons like low network speed or your computer cannot keep up with transcoding.

If it is transcoding then your device may not support that format so it cannot be streamed.
If it can support then the used renderer conf may not be the right one or needs tweaking.

I don't know anything about the Mac to say how to hide it.

On windows you can choose what tray icons to show and set them to hidden to a separate menu.
I assume MacOS has a similar ability somewhere.

The icons should follow the system theme for the colours but maybe the UMS icon is missing that ...

Only you can answer these questions as it depends on your workflow and devices to play on.

This will be because you have your download folder on the shared folders list so UMS will watch that for changes so it can update the database for new media.
One problem with this it does lock media in that folder while the files are being scanned and may not release it before to tried to move it ...

You can do this by clicking on the renderer icon. In the web interface there click the blue [...] button and then controls which opens a side bar.

Like I mentioned it may be due to changes in the binaries and a clean install might fix it. Backup your configuration files first.

I did not see any errors or anything showing something wrong, the logs just stop abruptly so if this is when UMS is stopping them it may be something on your computer stopping its process.
